- 1Quelques règles générales touchant les perforations des organes On attribue, si cela est possible, toutes les perforations à des causes accidentelles, par exemple à la main du boucher ou aux dents du loup. Si l'on doute si la perforation s’est produite durant la vie de l’animal ou après la saignée, on pratique un second trou qu'on compare avec l’autre. L'examen comparatif ne se fait que pour les perforations du rumen et de l'intestin, mais non pas pour celles du cœur, de la rate et du gésier. G LOSE : V. § 36 au sujet de l’usage en pareil cas. L’animal est immangeable si on n’a aucune raison pour supposer que la perforation s’est produite après la saignée.
- 2L’animal devient immangeable par la perte, à la suite d'une maladie, ou par l'absence congénitale d'un de ces organes dont la moindre perforation rend immangeable. G LOSE : Sauf la rate, dont seule la perforation rend immangeable, mais non pas l'absence. De même si un tel organe est double, l’animal est immangeable; car un organe de plus est considéré comme un organe de moins. Partout où la perte d’un certain organe rend l’animal immangeable, l’animal est également immangeable en cas d'absence congénitale de ce même organe. D'aucuns déclarent l’animal mangeable dans ce dernier cas. G LOSE : En cas de grande perte, on peut se baser sur cette dernière opinion.
- 3Partout où l’animal devient immangeable par suite de la perforation, de la perte ou de l’absence congénitale d'un organe, il le devient également par suite de l'écrasement de ce même organe. G LOSE : Pour nous qui ne sommes pas assez expérimentés, tout changement de couleur d'un organe est considéré comme une perforation.

כל אבר שאמרנו שאם ניקב במשהו טריפה כך אם ניטל כולו טריפה בין שניטל בחולי או ביד בין שנברא חסר וכן אם נברא בשני אברים מאותו אבר טריפה שכל היתר כנטול חשוב (חוץ מטחול שניטל כשר וניקב בסומכיה טריפה) (טור) וכל שאמרנו בו אם נברא חסר טריפה כ"ש אם ניטל ביד וכל שאמרנו בו אם ניטל טריפה הוא הדין לנברא חסר ויש מכשירין בזה (ובהפסד מרובה יש לסמוך אמכשירין) (ד"ע):
כל אבר שנקיבתו או חסרונו או נטילתו פוסל אם נתמסמס פסול: הגה ואנן שאין אנו בקיאין כל שנשתנה מראית הבשר לריעותא הוי כניקב שם (הגהות מיימוני ומרדכי):
