    Grinding

There is grinding only with things that grow from the ground. Many poskim permit chopping finely close to the meal; some are strict and chop a bit larger. Mashing a banana with a fork is permitted by most when it is edible as is, preferably with a slight change.

    Squeezing

Squeezing olives and grapes is forbidden by Torah (Shabbat קמ״ה ע״א (145a)). Other fruits - rabbinically forbidden if commonly squeezed for drink. Squeezing onto food (lemon on salad) is permitted, since the liquid goes to food (SA OC 320:6).
