- 1THE LAWS OF WETHER FRUIT JUICES LEAVEN; 7 SECTIONS Fruit juice without water does not leaven at all and is permitted to eat on Pesach Matzah which was kneaded with fruit juice, even if [the dough] was idle all the day. However, one may not fulfill his obligation with it, because of its Matzah Ashirah, and the verse states "lechem onee".
- 2Fruit juice with water accelerates leavening more than other dough, therefore one should not knead with them and if kneads with them he should bake it immediately.
- 3It is permitted to knead with wine even though it's impossible that there wasn't a drop of water which fell into it at the time of pressing. Even initially, it is normal to put water at the time of pressing in order to permit [impurities] via connecting flow. Nevertheless, we are not concerned about this since afterward, the water is neutralized in the [proprotion to the] wine prior to kneading the dough.
- 4Egg liquid and all other liquids are generalized with fruit juice. REMA: and in these countries [Ashkenaz] it is not practiced to knead in fruit juice and even to batter the Matzot is only practiced after they are baked and still hot. One should not deviate from this when not a time of need. The needs of the sick or elderly are [examples] of this.
- 5[When] kneading dough in fruit juice, it is good to do with less than the measure of an "eesarone"[43.2 eggs] so that one isn't obligated in Challah tithe.
- 6Wheat which was found in honey or wine and vinegar is permitted, provided water has not mixed into it.
- 7One should sift the salt prior to Pesach [so that] there is not wheat within it, for when the salt becomes wet, a minute amount of the moisture enters the wheat and it will leaven.

מי פירות בלא מים אין מחמיצין כלל ומותר לאכול בפסח מצה שנילושה במי פירות אפילו שהתה כל היום אבל אין יוצא בה ידי חובתו מפני שהיא מצה עשירה וקרא כתיב לחם עוני:
מי פירות עם מים ממהרים להחמיץ יותר משאר עיסה הלכך אין ללוש בהם ואם לש בהם יאפה מיד:
מותר ללוש ביין אע"פ שא"א לו בלא טיפת מים שנופלת בשעת הבציר ואף לכתחלה רגילים ליתן מים בשעת הבציר כדי להתיר נצוק ואעפ"כ אין לחוש להם הואיל וכבר נתבטלו המים ביין קודם שלשו העיסה:
מי ביצים ושאר משקים כולם הוי בכלל מי פירות: הגה ובמדינות אלו אין נוהגין ללוש במי פירות ואפילו לקטוף המצות אין נוהגין רק לאחר אפייתן בעודן חמין ואין לשנות אם לא בשעת הדחק לצורכי חולה או זקן הצריך לזה:
הלש עיסה במי פירות טוב לעשותה פחות מכשיעור עישרון כדי שלא תתחייב בחלה:
חטה שנמצאת בדבש או ביין וחומץ מותר ובלבד שלא נתערב בהם מים:
יש לברר המלח קודם פסח מחטים שלא יהיו בתוכו כי כשהמלח מתלחלח הוא נכנס מעט מעט בחטים ומתחמץ:
