    <b>דין מליחת הלב והריאה. ובו ד' סעיפים:</b><br>הלב מתקבץ הדם בתוכו בשעת שחיטה לפיכך צריך לקרעו קודם מליחה ולהוציא דמו ולמלחו אחר כך: ואז מותר אפילו לבשלו (ארוך כלל ט"ו) (ויש מחמירין לבשלו רק צולין אותו) ואחר כך מבשלו (ש"ד):

    On Salting the Heart and Lungs At the time of slaughter, the blood concentrates in the heart; therefore, this viscera must be opened before salting. G LOSS : By doing so, the heart can even be cooked in a pot afterward. Some opine that the heart should never be cooked but only grilled.

    מלחו ולא קרעו קורעו אחר מליחתו ומותר אף על פי שנמלח עם הדם שבתוכו דכבולעו כך פולטו והוא הדין אם צלאו ולא קרעו שקורעו לאחר צלייתו ומותר אבל אם בשלו בלי קריעה אסור עד שיהא ס' כנגד הלב דלא ידעינן כמה נפק מיניה: הגה ואפילו בדאיכא ס' הלב עצמו אסור (ארוך וש"ד מהרא"י ורי"ו) ויקלוף מעט סביב הלב ויש מחמירין בו אפילו במליחה לאסור שאר בשר שנמלח עמו ואומרין דלא אמרינן כבולעו כך פולטו גבי דם הלב הכנוס בתוכו דהוי דם ממש ולא מקרי דם פליטה (הגהת ש"ד בשם ר' מתתיה וכ"מ במרדכי בשם ר"י) והמנהג להקל וכן עיקר דגם זה מקרי דם פליטה ושייך למימר ביה כבולעו כך פולטו מידי דהוי אדם שבחוטין כמו שנתבאר לעיל סימן כ"ב (וכ"ד האו"ה ומהר"א כ"ץ) ויש מחמירין לקלוף קצת במקום שהיה הלב דבוק (בארוך ומרדכי שם) . וטוב לחוש לדבריהם ולקלוף קצת סביב הלב ואז הכל מותר ואין חלוק בין בשר שעם הלב או הלב עצמו ואין חלוק בין אם הלב סגור או פתוח למעלה (ד"ע ולא כאו"ה) ונוהגין לכתחלה לחתוך ערלת הלב ולחתוך גידין שבפנים (ארוך) ואינו אלא חומרא וזהירות בעלמא:

    If the heart is salted or grilled without being opened beforehand, it should be opened afterward, and it is permissible. For it is assumed that the heart expels blood while absorbing it. But if it is cooked without being opened beforehand, the pot must contain a quantity of food sixty times the volume of the heart. G LOSS : Even in this case, the heart itself remains forbidden; and the other foods that touched the heart must be scraped. Some forbid even the other meat salted together with the heart, as the heart's concentrated blood does not flow out of the other pieces that absorbed it as easily as their own blood. The custom is to be moderate in such a case; for even the absorbed concentrated blood flows out along with the own blood, as seen with the blood of the jugular veins in § 22. Some require scraping the piece that touched the heart. This opinion should be considered, and a bit around the heart should be scraped, then everything is permissible, other pieces as well as the heart itself, without distinction if the heart is closed or opened at its upper end. It is customary to cut, deliberately, the end of the heart and the veins distributed there; but this is done only as a supererogation.

    אין עוף שלא יהא בו ששים כנגד לבו ומותר אפילו הוא דבוק בעוף: הגה וכל עוף יש בו ס' אפי' אין בו הראש והרגלים התחתונים (פסקי מהרא"י סימן צ"א ור"י מינץ ובארוך) כדרך שנוהגים להסירן דהיינו עד הארכובה התחתונה ולכן אם העוף שלם הכל מותר ואם אין שלם וליכא בו ס' נגד הלב הדבוק בעוף י"א דהחתיכה נעשית נבילה ובעינן ס' בקדירה נגד כל העוף (טור בשם י"א וכ"ה בפוסקים) וכן נוהגין ואפילו איכא ס' בקדירה העוף אסור הואיל ואין בו ס' נגד הלב הדבוק בו ואם אין הלב דבוק בעוף מצטרף כל הקדירה לבטל הלב בס' ועיין לקמן סימן צ"ב בדין חתיכה נעשית נבילה ואין לך בהמה שהיא ס' נגד לבה:

    There is no poultry whose volume is not sixty times that of the heart. Therefore, the entire poultry is permissible when cooked together with the heart, even if the heart adheres to it. G LOSS : Any poultry, even one from which the head and leg ends are removed, presents a volume sixty times that of the heart. Therefore, when the poultry is whole, everything is permissible; otherwise, the entire poultry is, according to some authors, considered a forbidden piece, so that the pot's contents must be sixty times the volume of the entire poultry; and even in this case, the poultry itself remains forbidden, as it does not present a volume sixty times that of the heart. If the heart does not adhere to the poultry, it suffices that the pot's contents be sixty times the volume of the heart. See later, § 92, regarding this ruling. No horned animal presents a volume sixty times that of the heart.

    הריאה אינה צריכה חיתוך אבל נהגו לקרעה ולפתוח הקנוקנות הגדולים שלה ומנהג יפה הוא:

    The lungs do not need to be cut before salting. However, it is customary to cut them and open the large bronchi. This is a praiseworthy custom.
