Our Rabbis taught: Which is matzah? Any [bread made from] the five species of grain: wheat, barley, spelt, rye, and oats.
This definition isn't merely technical; it reveals the essence of the mitzvah. Only that which can become chametz can also be matzah. This is a complete contrast to 'chametz,' and thus matzah receives its meaning.
